A Napa Valley native and fermentation enthusiast who believes in blending traditional methods with modern science. Join my journey through the art and science of craft beverage fermentation.

Growing up in St. Helena, California, I was surrounded by the rich traditions of winemaking. However, my fascination with fermentation extended far beyond wine. While my early education at UC Davis focused on Viticulture & Enology, my curiosity led me to explore the broader world of fermented beverages during my post-graduate travels.

Journey into Fermentation

What began as a traditional wine education transformed during my three-year journey across Europe and Asia. In France, I studied traditional wine fermentation methods, but it was in small villages across Eastern Europe where I discovered the art of kvass and fruit ferments. In Japan, I spent six months studying koji fermentation and traditional tea fermentation techniques, while my time in Korea introduced me to unique probiotic beverages that would later influence my experimental recipes.
